Cafayate sits at the southern end of the Calchaquí Valleys, where dry, sunny days, cool nights and altitude produce aromatic white wines. Torrontés is the local signature, but the valley’s Malbecs and Tannats are increasingly well regarded.
Wine
Several wineries are within walking or cycling distance of the main square, and many offer tastings without an appointment. The Museum of Vines and Wine is a good introduction before you start.
The Quebrada de las Conchas
The road north to Salta runs through the Quebrada de las Conchas, a canyon of red and ochre sandstone carved by wind and water. Stop at the Garganta del Diablo and the Anfiteatro, natural chambers in the rock with remarkable acoustics. The light is best in the late afternoon.
